Ingredients for 4 people:

  • 12 "Tomperinos" tomatoes
  • 12 "Cocktail" tomatoes Cocktail Bacco
  • gr 300 Ragusano cheese PDO
  • lt 0,500 Milk
  • lt 0,500 Whipped cream
  • 8 Isinglass
  • Homemade bread
  • Toasted breadcrumbs
  • Aromatic herbs
  • gr 100 Ragusano cheese flakes
  • Edible flowers
  • gr 100 Tomato paste

Instructions:

For the tomatoes: Peel the tomatoes, dig the "Vesuvians"and set them aside.
Season the ramaining "Cocktail" tomatoes in the oven with sugar, salt and aromatic herbs.

For the cream: Soak the isinglass. Bring milk to a boil and add grated Ragusano cheese and melt it completely. Finally add the squeezed isinglass. Strain the mixture and allow to cool down at room temperature. Once coagulate the mixture, mix the whipped cream. Keep in the fridge as long as necessary.
Serve as photos.
